Limoncello

Ingredients

12 lemons, unwaxed and washed

1 litre alcohol or vodka

330g sugar

1litre water

 

 

Method

Thinly peeled pith from the lemons.

Peel only the pith from all of the lemons taking care not to cut away any of the white part.

 

 

 

Wide necked flask and alcohol (96% proof!)Place the peel into a wide necked bottle and add the alcohol,  Seal it and leave in a cupboard for three weeks.

Set an alarm to remind you that it is there!

 

 

 

After three weeks;

Decant the juice to a jug.

Discard the peel.

Gently heat the water in a large pan and add the sugar.  (Feel free to add more sugar if you prefer a sweeter taste.)

As soon as the sugar has dissolved remove the pan from the heat and allow it to cool thoroughly.

Add the sugar and alcohol mixtures together.

Pour carefully into your clean, empty bottles and label.

Store in the fridge.

Drink as either a refreshing shot, or mix with lemonade or sparkling water.  The limoncello is also delicious with sorbets of ice cream or drizzled over a lemon cake, tart of lemon meringue.
